Jimboy's Tacos is a Sacramento-based Mexican-style fast food restaurant chain, started in 1954 by a couple named Jim and Margaret Knudsen. ==History== In 1951, Grass Valley, California restaurant owners Jim and Margaret Knudson〔(Homecoming for taco titan )〕 visited a friend's house for dinner. They were served tacos, their first time eating this food, and having experience in the food service business, they thought that the taco was food everyone would love. Jim soon after started experimenting with the taco. In 1954, Jim was ready to market the taco, and turned a trailer into a mobile taco stand in Kings Beach, California, on the north shore of Lake Tahoe.〔(Jimboy's Official Site )〕 By 1955, Jim and Margaret had a new, larger trailer in South Lake Tahoe, California. In a few years, they had enough business to open a stand in Sacramento. At this time, they started licensing franchises in limited numbers.
